Brandies and revealed

The monks of the Cistercian Monastery of Valbuena in San Bernardo, began the distillation of pomaces and the elaboration of liquors by the year 1143, using the same methods as we do today.

Distilleries Del Duero was born in San Bernardo (Valbuena de Duero, Valladolid) in the year 1998. Its location at this point is marked by the fact of being surrounded by the best wineries in the Ribera Del Duero, its easier to get the perfect access to the best POMACES of the area, which are our raw material.

It is very important the closeness of the Monastery of Santa Maria de Valbuena, Cistercians jewel of the first half of the twelfth century, as it is the place from which it has been radiating all kinds of knowledge, among which it was the preparation of distillates.

Destilerías del Duero tried to do the same: to have the ability to combine the knowledge and the crafted elaboration (represented by the monastery) with the most modern technology.

We receive the pomaces from the best wineries in the area (Matarromera, Emina, Rento and many others from the Ribera del Duero Golden Mile) and we distil them in Copper Alembics with the same patience that is required in the craft work, but applying our modern technology.

Each alembic has a boiler, a rectifier and a condenser; we have two different sets of Alembics: One of them distils some steam and the other distils directly with fire.

In both cases it is the rectifier, this element of modern distillation, which streamlines the distilled product into an excellent Brandy that will underpin all our liquor.

In our Distillery we produce different products, all of which are derived from the spirit produced by distillation of the pomaces:

HEREDAD DE ALDOR

HEREDAD DE ALDOR - AGUARDIENTE DE ORUJO DE UVAS

Company: Destilerías del Duero.
Name of the liquor: Heredad de Aldor Aguardiente de Orujo de Uvas.
Company address: Ctra. Renedo-Pesquera Km. 30 Valbuena de Duero (Valladolid), Spain.
Raw material: Freshly-devatted eaux-de-vie of the Ribera del Duero made of the most common varieties of this D.O. such as Tempranillo, Cabernet, Merlot and Pinot Noir.
Alcoholic graduation: 28% Vol.
Type of production: Distillation in copper stills following traditional methods with the latest control systems.
Serving temperature: Between 8º and 12ºC.
Presentation: Bottle of 50 cl.
Pairings: Excellent tonic-digestive , ideal after a meal.

Tasting notes

Appearance: Clean, bright and clear.

Nose: The first aromatic impact is of raisins, honey, violets, plums and herbs.

Mouth: A long, smooth entry with a delicate finish and an aftertaste full of the tones given by the Tempranillo, Cabernet and Merlot varieties: green pepper, cocoanut, anise, raspberry, currants, watermelon, pumpkin, walnut, hazelnut and cocoa.

HEREDAD DE ALDOR - LICOR DE AGUARDIENTE DE HIERBAS

Company: Destilerías del Duero.
Name of the liquor: Heredad de Aldor Licor de Aguardiente de Hierbas.
Company address: Ctra. Renedo-Pesquera Km. 30 Valbuena de Duero (Valladolid), Spain.
Raw material: Spirit distilled in-house from eaux-de-vie of the Ribera del Duero.
- Herbs, seeds and aromatic spices (over twenty varieties).
Alcoholic graduation: 17% Vol.
Type of production: Distilled in copper stills following traditional methods with the most up-to-date control systems.
Serving temperature: Between 4 and 8º C.
Presentation: Bottle of 50 cl.
Pairings: Excellent tonic-digestive, ideal after a meal.

Tasting notes

Appearance: Clear, bright, toasted yellow colour.

Nose: Notes of herbs and fresh-cut spring flowers.

Mouth: The first impact on the palate is one of fresh-cut herbs, followed by a great complexity of aromatic seeds. A long, powerful, spicy and balmy aftertaste.

ESDOR

ESDOR - LICOR DE AGUARDIENTE DE HIERBAS

Raw material: Spirit distilled from our own Orujos and over twenty different types of herbs, seeds and aromatic spices.
Alcoholic graduation: 24% Vol
Type of production: Selective maceration in our high-quality Aguardiente de Hierbas, Semillas y Especias Aromáticas.
Serving temperature: 4-8º C.
Presentation: Bottles of 50 and 20 cl.
Pairings: Excellent after a meal, as a digestive or stomach tonic, and also as an aperitif.

Tasting notes

Appearance: Clean, bright and clear, with a pale amber colour.

Nose: The first impact is of aromatic herbs, camomile, thyme, mint, basil and sage.

Mouth: As it warms up in the mouth, there appear liquorice, anises and spices (cinnamon or cardamom). On the palate it is long-lasting, with an aftertaste of the aromas of the varieties of distilled grapes Tempranillo, Merlot and Cabernet.

ESDOR - LICOR DE AGUARDIENTE DE PIÑONES

Pairings: Excellent after a meal as a digestive, but always in very small servings.

Tasting notes

Appearance: Clean, bright and clear.

Nose: The first aromatic impact is of fresh eaux-de-vie, characteristic of the Tinto Fino variety with its aroma of raisins and grapes, honey, violets and red fruits, along with green apple, peach, pepper, coconut, hazelnut and cocoa.

Mouth: Long aftertaste of raisins and spicy fruits.

ESDOR - LICOR DE AGUARDIENTE DE ROSAL SILVESTRE

Raw material: Spirit distilled from our own pomaces and rosehip of wild rose.
Alcoholic graduation: 20% Vol
Type of production: Maceration in our Spirit for an extended period of time.
Serving temperature. 8-14º C.
Presentation: 20 cl and 50 cl bottles.
Pairings: excellent complement after eating. It is tonic and full of Vitamin C.

Tasting notes

Appearance: it is Clean, transparent, bright, with an attractive red-orange colour.

Nose: On the nose it can be find the range of aromas of all kinds of fruits, grapes, peaches, figs, plums, toasted and Pedro Ximenez.

Mouth: On the palate it is elegant and smooth.

Pairings: Excellent after a meal as a digestive, but always in very small servings.

Appearance: Clean, bright and clear.

ESDOR - BRANDY

Raw material: Spirit distilled from our own orujos , aged in oak barrels.
Alcoholic graduation: 39% Vol.
Type of production: Aged in American and French oak casks.
Serving temperature. 20-22º C.
Presentation: 50 and 70 cl bottles.
Pairings: A good complement for any kind of food.

Tasting notes

Appearance: Clean, bright and transparent, with the natural amber colour of the oak it was aged in.

Nose: Smooth toasted, leather and wood notes from the French oak, along with slight tones of vanilla, cinnamon, cocoanut, hazelnuts and red and black fruits.

Mouth: Well-rounded but delicate.
